[food] parsnip risotto, redux
Jan. 21st, 2026 11:11 pmBack in November I made a ridiculously overengineered parsnip risotto, as a way of dipping a toe into my next cookbook project. I said at the time that it was very tasty, and also I was unlikely to ever make it again.
However. I am about to have a (temporarily) restricted-for-medical-reasons diet. The approach to these restrictions that works best for me is to have Treat Foods that I might not ordinarily consume.
The Overengineered Parsnip Risotto? meets the dietary requirements for a low-fibre diet (if one omits the thyme pesto, sob) and is enough effort for my brain to parse it as Fancy and is a thing I definitely need A Special Occasion to convince myself to get to. And even it does several days' worth of food, and we have A Parsnip Backlog lurking in the bottom drawer of the fridge.
... I think I'm making the parsnip risotto again next week.
