In the form of notes-to-self rather than a shape that is likely to be useful to anyone else, but I keep flipping between dishingouthealth and Food52 and actually having a single consolidated write-up to refer to is Useful for making Easy Food actually, you know, easy.
Ingredients
olive oil
celery/carrot/garlic, diced
onion/leek/etc, finely sliced
pepper, sliced or diced as seems best
tin tomatoes
saffron
smoked paprika
bay leaf
suitable rice
veg stock
courgette, chopped
frozen beans (broad and French)
lemon
tin artichokes
optional broccoli/fennel/...
Method
- soffrito: cook allium and celery and carrot together in olive oil, very gently, for as long as you can be bothered with.
- add pepper and garlic and cook for another few minutes.
- EITHER:
- add tinned tomato. rinse out with veg stock. cook very gently and very slowly until you have a thick paste-like sauce. at this point, add rice/saffron/bay leaf/paprika. OR:
- add rice, saffron, bay leaf, paprika, cook for a couple more minutes, then add tomato.
- add appropriate volume of veg stock. stir.
- arrange on top of the rice soup, pressing into it as appropriate, probably with the broccoli winding up on top, All Of The Other Veg.
- bring to boil, then cover and simmer for ~30 minutes.
