Every year I talk about making these, and last year (by which I mean, obviously, 2020) I even posted the recipe, but this time I'm posting the recipe with slightly more by way of commentary.

Apart from its terrible index (and incorrect recipe for Strudelteig/Strudel pastry, and proportions of filling to dough for Potitze...) I can highly recommend Gretel Beer's Classic Austrian Cooking, which this recipe is lightly adapted from.
