Feb. 19th, 2022 09:32 pmToday I have been tidying up the kitchen some, by which I mean "making a batch of black sesame ice cream", which meant I had egg whites that needed using, which is why I finally got around to making amaretti.
I am very happy with how this recipe turned out! New favourite thing to do with egg whites.
Ingredients
250g almond meal (optionally from unblanched almonds)
200g sugar
zest of 1 lemon
3 egg whites
few drops concentrated bitter almond flavour (e.g.)
extra sugar -- Some, spread out on a dinner plate
Method
Pre-heat oven to 190°C, and line a baking sheet with baking paper.
Mix almond meal and sugar. Zest lemon into the mix, and mix again.
Whisk egg whites to soft peaks. Add a few drops of bitter almond essence and whisk again to combine.
Fold the egg whites into the dry ingredients using a large metal spoon.
Once incorporated, get your palms slightly damp and pat the plate of sugar. Using said sugary hands, roll the amaretti dough into small balls, then roll again in the sugar. Transfer to baking sheet.
Bake in centre of oven for ~25 minutes.

Date: 2022-02-21 08:05 pm (UTC)I don't have anything called "bitter almonds" extract, but I do have a bottle of "almond extract." The ingredients say "oil of bitter almonds," so I think it must be the same thing. I guess I'll try it and see how they turn out...
