I'd started boiling milk up for Kardemummebullar, but decided it smelled a little far gone for that application, so I chucked in the juice of half a lemon as well and thereby achieved paneer (plus or minus a few steps)...
... and then boiled up some more different milk for the bullar...
What I was specifically making in this instance: Mohnpotitze, which I have utterly failed to write up a recipe for, hm, maybe I should post it at some point this week. It's basically a giant Swiss roll, except instead of sponge cake you have an enriched yeast dough and instead of jam/whatever you have A Filling; in this instance, the filling is Mohn, poppyseed, with sugar/lemon/raisins/nationalism rum.
Only I managed to remember to halve the quantity of Mohn but none of the other filling ingredients, so it is (1) very sweet and (2) extremely boozy.
