Amalgamated from several other recipes.

This worked out acceptably and I am going to do it again.
ingredients
- ~1" minced ginger
- ~3 cloves garlic, minced
- 1 tsp Sichuan pepper
- spring onions, sliced on the diagonal, white and green parts separated
- mushrooms, diced, at least one bowlful and probably more
- 2 tbsp gochujang (because it's what I have in okay)
- 2 tbsp black bean paste (ditto)
- hot water
- 1 tbsp cornstarch
- a plausible quantity of tofu, medium to medium-firm, chopped
- sesame oil to dress, maybe
method
- fry ginger, garlic, pepper, onion whites until fragrant (not very long at all); add mushrooms and cook until soft, then move to one side of wok
- add gochujang and black bean paste and fry for a few minutes, then stir to combine
- add water + cornstarch (rinse out container that had the bean pastes in, probably)
- turn down heat, add tofu, and combine very gently; cook for long enough for the tofu to actually heat through
- use onion greens as garnish, maybe stir through sesame oil, etc
This worked out acceptably and I am going to do it again.
