Amalgamated from several other recipes.

ingredients
  • ~1" minced ginger
  • ~3 cloves garlic, minced
  • 1 tsp Sichuan pepper
  • spring onions, sliced on the diagonal, white and green parts separated
  • mushrooms, diced, at least one bowlful and probably more
  • 2 tbsp gochujang (because it's what I have in okay)
  • 2 tbsp black bean paste (ditto)
  • hot water
  • 1 tbsp cornstarch
  • a plausible quantity of tofu, medium to medium-firm, chopped
  • sesame oil to dress, maybe


method
  1. fry ginger, garlic, pepper, onion whites until fragrant (not very long at all); add mushrooms and cook until soft, then move to one side of wok
  2. add gochujang and black bean paste and fry for a few minutes, then stir to combine
  3. add water + cornstarch (rinse out container that had the bean pastes in, probably)
  4. turn down heat, add tofu, and combine very gently; cook for long enough for the tofu to actually heat through
  5. use onion greens as garnish, maybe stir through sesame oil, etc


This worked out acceptably and I am going to do it again.
