hello self. the Dundee cake recipe you keep looking for.
[12/02/17] ... copying the recipe out because I'm bored of having to scroll backwards and forwards through the bake-along every time.
75g unsalted butter, softened, or dairy-free margarine
150g caster sugar, plus extra for the top
Finely grated zest of an orange
250g plain flour or gluten-free flour mix
3 large eggs, or egg replacer
100g marmalade or apricot preserve
100g ground almonds, hazelnuts or walnuts
375g mixed dried fruit - be creative if you like
200g glacé peel or cherries - less if you prefer
1 tsp baking powder
100g blanched almonds for the top
Pre-heat oven to 170°C/fan 150°C/335°F/gas 3.
Cream butter and sugar.
Add orange zest and ~1/3rd of the flour, then beat in eggs one at a time, followed by marmalade.
Beat through ground nuts, then add flour and baking powder. (Self-raising flour is also acceptable, wow!)
Add dried fruit & peel; mix through.
Dan Lepard reckons you then baked the thing (covered with foil) for 45 minutes, then press the blanched almonds into the surface, and lower the temperature 20degC. It then wants to sit in the oven for a further 60-90 minutes.
