[food] Apple cake
Jul. 1st, 2014 08:00 pmI made this up out of a mishmash of general impressions this morning, Because Cake (... this morning was good okay). So! Writing it down so I don't have to next time.
Ingredients
250g butter
250g sugar (half+half brown/white)
4 eggs
250g flour (half+half brown/white)
baking powder
ground mixed spice (lots)
handful or so of walnut pieces
1.5 large apples, peeled and chunked
Method etc
(I am starting to get the hang of my oven - I've never really cooked seriously with fan-assisted ovens before and wow do I actually need to bake cake at 160degC not 180!)
Cream butter & sugar. Add eggs gradually. Once combined, add flours, baking powder, walnuts, spice; mix til combined.
Scatter as many of the apple chunks as will fit in the base of your cake tin (probably with a circle of greaseproof in't). Put leftovers in with the cake mix. Put the cake mix on top of the apples.
Bake at a temperature appropriate for your oven for Some Time (I think it took about an hour, but it will also depend on the form factor of your cake tin - I went for one of my deeper tins).

Like, there's lots of tweaks that could be made - I basically went "FUCKIT POUND CAKE IN METRIC" and might try a bit harder to make sense of it next time - but I am always super-super interested in how food works for folk :-)
(also I really want to put cream cheese frosting on this, and I normally HATE cream cheese frosting, so idek)
