On Saturday, James Jackson ("JJ"), Head of Earth Sciences, earthquake specialist and brilliant lecturer, will be giving a talk on the Japan (Sendai) earthquake and future hazards. I intend to be there.
Aubergine curry
Quantities in brackets feed about two, together with an experimental chapati each. (I'm not very good at them yet - a rolling pin would help, I suspect...)
Oil and butter for frying (butter for the flavour; oil so the butter doesn't burn), in the absence of ghee.
Fennel seeds. Fresh ginger. Lots. (1 tsp; 1.5")
Onion, in ~5mm chunks. (one medium)
Aubergine, in fork-sized chunks. (half one medium-large)
Chickpeas (tinned). (half 440g tin)
Cherry tomatoes, in tiny bits. (4)
Large quantities of fresh coriander. (half a largish bundle)
Lemon juice.
Fry the fennel seeds and fresh ginger until aromatic. Add the onion; cook until soft. Add the aubergine. Leave to its own devices forever, and then a little longer, over a low heat; part way through, add the tomato. Add the chickpeas to heat through. Add the coriander. Squeeze of lemon juice, then serve.
