This is from the Waitrose Food 2021 calendar (February's recipe, in fact), and I cannot find hide nor hair of it online, which is a tragedy because it's great.
Ingredients
75g butter, softened
200g golden caster sugar
3 large eggs, separated
6 passionfruit, seeds and pulp thereof
2 limes, zest and juice thereof
250ml milk
50g plain flour
25g ground almonds
Method
Pre-heat oven to 180°C (fan). Grease an ovenproof container of some kind (I use one that's ~24cm square).
In a scrupulously clean dry etc, beat egg whites to softish peaks. (Unless you have two sets of beaters and are willing to dirty both of them, or you're doing everything by hand rather than with the aid of electricity, in which case do the next bit first.)
Cream butter and sugar until pale and fluffy. Add yolks, passionfruit contents, and lime various. Once incorporated, stir in the flour and almonds, followed by the milk. This will give you a very loose batter.
Boil the kettle.
Fold in the beaten egg whites.
Decant the batter into the greased dish. Sit the dish in a roasting tin; pour just-boiled water into the tin to a depth of About Halfway Up The Sides Of The Baking Dish.
Bake for ~45 minutes, until golden.
Optional cardamom yoghurt
Finely grind some cardamom seeds (nach Geschmack). Stir through yoghurt. Leave to sit and infuse.
We have also, this time around, discovered that discount fancy supermarket custard goes well, too.
