[food] lentil & root veg salad
Jan. 14th, 2023 10:19 pmThis is (my approximation of) something that was regularly on the menu at the Michaelhouse Cafe lo these many years ago. I tended to get it as part of their quiche + three salads lunch option (... as a special treat, not regularly, I feel the need to explain), and that's mostly the context I make it in these days too -- usually to go with the caramelised onion and butternut squash tart (also v. good with additional beetroot, as we have recently discovered). You can vary the root veg; you can add cheese or seeds or nuts; if you are not sharing it with someone who is suspicious of most uncooked green herbs, basil honourably excepted, you can also fill it with parsley vel sim (... I am too tired for not Latin, sorry, have a wiktionary)
Ingredients (... I am also apparently too tired for quantities)
green lentils, ready to eat (I am pretty sure they don't want more than 5 minutes at pressure in the Instant Pot, and plausibly less)
carrot, coarsely grated, to taste (for ~4 portions this is normally ~1 large carrot)
celeriac, coarsely grated, to taste (equivalent to volume of carrot)
parsnips also work; beetroot theoretically work but I haven't tried them yet
a tablespoon or so of miscellaneous citrus juice (we mostly apply orange; lemon also works; etc)
optional extras (which we reckon takes this from "side" to "approximately complete protein, meal in its own right") include: pumpkin seeds; pecans; other misc seeds and nuts; feta; other misc cheese; PARSLEY; I keep idly contemplating pomegranate next time I see them reduced

Place ingredients in bowl. Stir to combine. Consume.
