i.e. I came across the concept, didn't like the recipe, and am cobbling one together here to try at some point in the future.
Ref 1 (oil-based), ref 2 (caramelised pears), ref 3 (browned butter-buttermilk muffins).
Ingredients
125g butter
350g SR flour
1 tsp baking powder
pinch of salt
100g granulated sugar
75g brown sugar
1/2 pint buttermilk (I'm not even sorry I'm like this)
pinch of saffron (~20 threads)
2 large eggs
2 pears, cored/peeled/cubed
tiny bit of water + ridiculous amount of sugar, if caramelising
Method
Preheat oven to 200degC/180degC fan. Heat the saffron (crushed) in the buttermilk, gently, for ~15 minutes. Brown the butter, and allow to cool.
Mix together the dry ingredients in one bowl and the wet ingredients in another. Combine gently, fold through pears (caramelised or not as you see fit), spoon into greased muffin pan, and bake for 20-30 minutes.
