Coincidentally I have this bottle of bitter almond essence for the specific purpose of getting around to making amaretti, since I'm sulky about the packaging of all the ones I can trivially buy...
... but perhaps this is a project for next week. :-p
(I am planning to follow an Ottolenghi recipe, because I have been following or interpreting or recreating a lot of Ottolenghi recipes this week and why not; I shall of course report how they turn out. :-p)
