[food] courgette fritters

Ingredients (for ~4 medium fritters to serve two)
1 courgette
1 egg
~1 tbsp flour
nutmeg
pepper
½ standard block of feta
oil
Method
Grate the courgette. Ideally, do this Early In The Day and leave it to Exude Water, but you can also just grimly put it all in a sieve and squish liquid out with your hands. (Without this step it is miserable and soggy and adding enough flour to make it not soggy renders everything unpalatable glue.)
Put the grated courgette in a bowl. Break the egg in; beat with a fork and stir through the courgette.
Add the flour, nutmeg, and pepper. Stir with the fork some more, to combine again. It will be fairly runny and THIS IS FINE.
Crumble in the feta and stir through.
And then! Heat oil in a frying pan over ~medium heat. Dollop in the courgette mixture. Let it sit on the first side for at least five minutes, until the edges are crisping and it comes up off the pan relatively easily. (This usually needs a lower heat and more patience than I want.) Flip; cook ditto.
Notes We usually serve with some combination of: rice cooked with fried onions and cloves; Tomatensalat, chilli chutneys or relishes; Other Salad.

Date: 2023-05-21 05:34 am (UTC)I also discovered that the courgette water, combined with a bit of lime juice and salt and several ice cubes, is *incredibly* refreshing on a very hot day. I think it might be an electrolyte thing, because in winter the idea of it just seems gross.

(the Southern style fried zucchini recipe I am used to - egg and some milk beaten together in one dish, flour, cornmeal, and a bit of salt and pepper mixed in the other. Slice zucchini into rounds, and then dip first in liquid and then in dry before putting in a pan of hot oil. Sprinkle some very thinly sliced onions on top while frying for extra flavor)
