Yes to cinnamon and almond and plum. I think, hesitantly, yes to thyme and plum. But I am unsure about cinnamon and thyme.

How do you feel about cardamon pastry?

ohhh my goodness, I personally can see my way to the whole thing working, but swapping cardamom and cinnamon makes it into a "fuck yes".

I might in future make it with all three, but I think three is too many flavour for an experimental baking I'm bringing to someone's birthday tea

Yeah, I can imagine the earthy-warm cardamom helping to knit together the thyme and cinnamon.

(The internet says thyme-cinnamon poached pears are totally a thing, and I think that *is* something I will try in future, but... I am currently very, very into the idea of cardamom-thyme and I think three might be too many flavour.)
