I think yes, my one worry is that the thyme and cinnamon would clash somehow (I like both a lot, but have not had them together). Would definitely count as a worthwhile experiment,

I would be slightly concerned about the cinnamon and the thyme clashing? They both seem like 'big' flavours, if that makes sense.

Yes to cinnamon and almond and plum. I think, hesitantly, yes to thyme and plum. But I am unsure about cinnamon and thyme.

How do you feel about cardamon pastry?

ohhh my goodness, I personally can see my way to the whole thing working, but swapping cardamom and cinnamon makes it into a "fuck yes".

This exactly. I am uncertain about thyme/cinnamon because I haven't had them together that I know of (and am not near my spice rack for a sniff-test) but Sounds Fascinating Would Nom!

I vote YUM, although it would probably contain gluten and thus be unsuitable for consumption by me. Also, maybe basil instead of thyme. Or else you need to do a scientific experiment and make two -- one with thyme, one with basil.

I think yes (but then, I'm game to try that sort of thing at least once every time, so.)

If you're making savoury pastry, the parmesan & thyme pastry from this recipe is A-MAZ-ING: http://www.bbc.co.uk/food/recipes/quichelorraine_85455

Oh, in that case, go for it! Can't you make syrup with herbs like that too? I have no clue about that though, really.

Yeah, I can imagine the earthy-warm cardamom helping to knit together the thyme and cinnamon.

...I'm going to be doing something like this myself, aren't I. AAA.

(this weekend: applesauce muffins, topped with dulce de leche. homemade, chunky, heavily spiced applesauce.

yes.)
