- still not managing to time the yeast activity right, but attempting to console myself that this is something it took me a while to get my head around with bread also
- i at least can salvage batter that is Sad using bicarb, which is not what I'd ideally like to do but Is An Option
- there really is a thing about Getting The Consistency Right whereupon it doesn't just furiously cling to the frying pan even with Only Minimal Oil
- ... would be super nice if I could work out how to articulate it but oh well guess I just gotta keep making injera until I have Learned It satisfactorily
