[food] Sweet potato-peanut stew

(Apparently I haven't posted this recipe? Or at least if I have I didn't tag it usefully.)

2 onions, chopped
1 large sweet potato, peeled & chopped
1" ginger, peeled & chopped
2 cloves garlic, peeled & chopped
½tsp ground coriander
½tsp cinnamon
2tbsp peanut butter
150g fresh spinach
2tbsp fresh coriander, chopped (optional!)
2 tins tomato (however you prefer it!)
fat or oil

Sweat onions, ginger, garlic, coriander & cinnamon in fat/oil over medium-low heat until translucent. Add sweet potato, and cook until beginning to soften (~10 minutes). Add tomato, bring to the boil, then cover and reduce to simmer. Leave for ~20 minutes. When sweet potato is soft (test with knife), add peanut butter and stir through until sauce thickens. Remove from heat and stir through spinach until it wilts. Garnish with coriander.

Extras:
- add a little lemon or lime juice at the very end to provide highlights
- use dried chilli flakes (add with onions, garlic, ginger) or fresh chilli (add with sweet potato) to give it some kick!
- if you eat meat, chicken goes well in this – cook it separately and add at the end

This is basically what I'm eating today except with coconut milk instead of peanut butter.

But I love peanut butter, so I'm totally doing this next time!

Wow, really interesting mix of ingredients. Hadn't thought of using peanut butter as an ingredient rather than a spread, but makes sense.
